This is a wonderful thick cake like cookie. It is so simple to make especially if you have a stand mixer (which I did not use this time because I was to lazy to get it out). My hand mixer was really struggling by the time all the flour was added.
INGREDIENTS FOR 48 SERVINGS: 1 cup butter 2 cups sugar 2 tbs buttermilk 3 eggs 5 cups all-purpose flour 1 tsp baking soda 1 tsp vanilla extract additional sugar for dusting
INSTRUCTIONS: Cream butter; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Add buttermilk, and beat well. Combine flour and soda; gradually stir into creamed mixture. Stir in vanilla. Chill dough several hours or overnight.
Roll dough to 1/4" thickness on a lightly floured surface; cut into rounds with a 3 1/2" cookie cutter. Place 1 inch apart on lightly greased cookie sheet; sprinkle with sugar. Bake at 400º for 7-8 minutes or until edges are lightly browned. Remove cookies to wire rack and let cool completely. Yield: 4 dozen.

Wrap in plastic wrap and place in refrigerator for several hours. (or in freezer until firm)
Roll out on lightly floured surface until 1/4 inch.
